Baked Pears with Candied Walnuts and Thyme

Ingredients (four servings):

  • ¾ cup walnut halves
  • ¼ cup white sugar
  • 2 red pears, halved with seeds removed
  • 1 tablespoon high heat oil (I used coconut)
  • 4 teaspoons brown sugar (1 teaspoon per pear half)
  • Vegan ice cream or whipped cream to taste (optional)
  • Dried thyme to taste

Procedure:

Preheat oven to 350 degrees Fahrenheit. Place walnuts on a baking sheet and roast until fragrant, about 5 minutes. Let cool slightly.

Heat sugar in a saucepan over medium heat, stirring constantly with a wooden spoon. When the sugar has completely melted and is amber-colored, pour walnuts in. Once the walnuts are coated with the sugar syrup, pour them out on a cookie sheet or plate lined with parchment paper. Use a utensil to separate the nuts so they don’t stick together.

Once the nuts cool and harden, you can chop them into smaller pieces if desired.

Preheat the oven to 400 degrees Fahrenheit. Coat pear halves with oil and place them on a cookie sheet. Place the pan in the oven and bake for 20-30 minutes.

Once pears are tender, top with brown sugar, walnuts, thyme sprigs and ice cream/whipped cream. Serve immediately.
